Yonsei Bourbon Project
Last year, Chef Kyle and a few of us traveled to Kentucky to collaborate with Woodford Reserve on a unique barrel to showcase at the restaurants. We toured the rickhouses, tasted through barrels, and talked through the notes on aromas and taste until we settled on the perfect pairing for our food.
A Barrel Chosen for the Food
We were specifically targeting notes and mouthfeel to mimic a good tare are nikiri sauce. In Japanese cooking, we use tare and nikiri sauces to tie a dish together and add depth to enhance the ingredients. It's the same idea here with the bourbon, more length and character, without being overpowering.
What is Double Oaked?
After initial aging, the bourbon is transferred to a second charred barrel, where it continues to mellow, while increasing in proof. This results in a deeper mouthfeel and a longer, smoother finish. Woodford's balanced mash bill of 72% corn, 18% rye, and 10% malted barley is what allows the extra oak to enhance the bourbon.
Drink Our Bourbon
This premium bourbon deserves a simple pour. We recommend it neat, on the rocks, or as a highball. It is also shines in classic cocktails like a Manhattan or an Old Fashioned.

Our Yonsei Bourbon is available by the ounce and by the bottle at both Yonsei locations - Albany & Oakland. Also available at our sister restaurant, Itani Ramen.

On your next visit to Yonsei Handrolls • Albany, you can purchase a bottle as part of our Bottle Keep program. A tag with your name is added to the bottle then stored on the shelf above our bar. Each time you visit, enjoy a pour from your bottle. Will definitely impress your guests!
